8-oz. pkg. penne pasta 2 T. butter 2 T. all-purpose flour 1-1⁄2 c. milk 1⁄2 c. half-and-half 1 c. shredded white Cheddar cheese 1⁄4 c. grated Parmesan cheese 2 c. shredded Gruyeré cheese, divided 1 t. salt 1⁄4 t. pepper 1/8 t. nutmeg
Prepare pasta according to package directions. Meanwhile, melt butter in a saucepan over medium heat. Whisk in flour until smooth; cook, whisking constantly, one minute. Gradually whisk in milk and half-and-half; cook, whisking constantly, 3 to 5 minutes or until thickened. Stir in Cheddar cheese, Parmesan cheese, one cup Gruyeré cheese and remaining ingredients until smooth. Stir together pasta and cheese mixture; pour into a lightly greased 11"x7" baking dish. Top with remaining one cup Gruyeré cheese. Bake, uncovered, at 350 degrees for 15 minutes, or until golden and bubbly. Serves 4
