2 c. sugar 1 c. oil 3 eggs, beaten 3 c. all-purpose flour 1 t. baking soda 1 t. salt 1 t. cinnamon 2 t. vanilla extract 3 c. cooking apples, peeled, cored and finely diced 1 c. chopped walnuts Garnish: additional sugar
In a large bowl, beat together sugar, oil and eggs. In a separate bowl, mix flour, baking soda, salt and cinnamon; add to sugar mixture and stir well. Add vanilla; fold in apples and nuts. Divide batter evenly between 2 lightly greased and floured 9"x5" loaf pans. Sprinkle tops with sugar. Bake a 325 degrees for one hour, or until a toothpick inserted comes out clean. Makes 2 loaves.
