Fresh Apple Cake

1 c. oil
2 c. sugar
2 eggs, beaten
2-1/2 c. all-purpose flour
1 t. baking soda
1 t. salt
1 t. cinnamon
2 t. vanilla extract
3 c. Golden Delicious apples, cored and chopped
1 c. chopped pecans or walnuts
Optional: powdered sugar


Combine oil and sugar in a bowl; add eggs and blend well. In a separate bowl, mix flour, baking soda, salt and cinnamon; add to oil mixture and blend well. Stir in vanilla, apples and nuts. Batter will be very stiff. Spoon into a greased and floured tube pan. Bake at 350 degrees for 50 to 60 minutes. Turn out cake. Sprinkle with powdered sugar, if desired. Serves 16 to 20.
