1 lb. ground beef
2 red peppers, cut into 2-inch squares
¼ c. onion, chopped
15-oz. can baked beans
1 T. fajita seasoning mix
8-1/2 oz. pkg. cornbread mix
1 egg, beaten
1/3 c. milk
Combine beef, red peppers and onion in a large oven-safe skillet over medium-high heat. Cook and stir until beef is browned and onion is translucent; drain. Stir in beans and fajita seasoning; heat through, stirring frequently. Spread out mixture evenly in skillet; remove from heat and set aside. Prepare cornbread mix with egg and milk according to package directions. Spread batter evenly over beef mixture in skillet; place skillet in the oven. Bake, uncovered, at 350 degrees for 20 minutes or until a toothpick inserted into cornbread layer comes out clean. Let cool slightly before serving; cut into wedges. Serves 6.
