Sweet Potato Pie

2 c. sweet potatoes, peeled, cooked and mashed
2 eggs, beaten
1-1/4 c. sugar
1/4 c. butter, melted
1 c. evaporated milk or
whipping cream
1 t. cinnamon
1 t. vanilla extract
9-inch pie crust
Garnish: whipped topping


Mix together mashed sweet potatoes, eggs and sugar. Add butter, milk or cream, cinnamon and vanilla; spread in pie crust. Bake at 350 degrees for one hour and 15 minutes; cool. Serve with a dollop of whipped topping. Serves 6 to 8.
