Black Bean Breakfast Bowls

2 T. olive oil
4 eggs, beaten
15-1/2 oz. can black beans, drained and rinsed
1 avocado, peeled, pitted and sliced
1/4 c. shredded Cheddar cheese
1/4 c. favorite salsa
salt and pepper to taste


Heat oil in a skillet over medium heat. Add eggs and scramble as desired, 3 to 5 minutes; remove from heat. Place beans in a microwave-safe bowl. Microwave on high until warm, one to 2 minutes. To serve, divide beans among 2 bowls; top each bowl with eggs, avocado, cheese and salsa. Season with salt and pepper. Makes 2 servings.
