1 boneless, skinless chicken
breast, grilled and cubed
2 T. mayonnaise, or to taste
1 T. sunflower kernels
1 T. dried cranberries
1/2 red onion, chopped
1 apple, cored and cubed
salt and pepper to taste
2 sandwich buns, split
Combine all ingredients except buns in a large bowl; stir well. Place buns, split-side up, under a broiler to toast. Fill buns evenly with chicken mixture. Makes 2 sandwiches.
