16-oz. pkg. baby carrots
3 slices bacon, chopped
1 apple, cored, peeled and sliced into thin wedges
2 T. maple syrup
salt and pepper to taste
Place carrots in a saucepan and cover with water; bring to a boil over medium heat. Cook for 10 minutes, or until crisp-tender; drain. Set aside. Cook bacon in a skillet over medium heat for 3 minutes, or until lightly browned. Add apple and cook for 2 minutes. Add carrots, maple syrup, salt and pepper; stir frequently. Cook until carrots are warmed through and lightly glazed. Serve immediately. Serves 4.
