Best-Ever Breakfast Bars

1 c. Sunrise Granola (see page 18)
1 c. quick-cooking oats, uncooked
1/2 c. all-purpose flour
1/4 c. brown sugar, packed
1/8 t. cinnamon
1/2 c. unsalted mixed nuts, coarsely chopped
1/2 c. dried fruit, chopped into small pieces
2 T. ground flaxseed meal
1/4 c. canola oil
1/3 c. honey
1/2 t. vanilla extract
1 egg, beaten


Combine granola and next 7 ingredients in a large bowl. Whisk together oil, honey and vanilla; stir into granola mixture. Add egg; stir to blend. Press mixture into a parchment paper-lined 8"x8" baking pan. Bake at 325 degrees for 30 to 35 minutes, until lightly golden around the edges. Remove from oven and cool 30 minutes to one hour. Slice into bars. Makes 12 bars, serves 12.

Nutrition Per Serving: 240 calories, 11g fat, 2g sat fat, 16mg cholesterol, 11mg sodium, 32g carbohydrate, 3g fiber, 13g sugars, 5g protein. Exchanges: 1 starch; ½ fruit; 2 fat; 1 other carbohydrate
