1/2 green pepper, thinly sliced 1/2 onion, sliced 8 mushrooms, sliced 2 T. olive oil 1/2 lb. scallops 1/2 lb. shrimp, peeled and deveined 1 clove garlic, chopped 4 T. butter 1-1/2 lbs. pasta, cooked salt and pepper to taste
Combine peppers, onions, mushrooms and olive oil in a saucepan; cover tightly with aluminum foil and simmer for 10 minutes. Remove covering and add scallops; cook, covered, for 5 minutes. Add shrimp and cook, covered, for another 5 minutes. In a separate pan, sauté garlic in butter; set aside. Place cooked pasta in a large bowl; pour seafood mixture and garlic butter over pasta and toss well. Salt and pepper to taste. Makes 4 to 6 servings. | |
