Pineapple-Topped Sweet Potatoes

2 c. sweet potatoes, peeled, boiled and mashed
1/4 t. salt
1/2 c. butter, softened and divided
1-1/2 c. sugar, divided
3 eggs, beaten and divided
1/4 c. milk
1 t. vanilla extract
1/4 c. all-purpose flour
8-oz. can crushed pineapple, drained


Combine sweet potatoes, salt, 1/4 cup butter, one cup sugar, 2 eggs, milk and vanilla in an ungreased 2-quart casserole dish; set aside. In a bowl, combine remaining butter, remaining sugar, remaining egg; and flour. Fold in pineapple; mix well. Spoon pineapple mixture over sweet potato mixture. Bake at 350 degrees for 30 minutes. Serves 8.
