2 c. creamy peanut butter
1/2 c. butter, softened
1 t. vanilla extract
1-lb. Pkg. Powdered sugar
12 oz. pkg. Semi-sweet chocolate chips
Mix peanut butter, butter and vanilla together in large mixing bowl. Add powdered sugar a small amount at a time, mixing by hand. Continue to add powdered sugar until mixture can be rolled in to small balls that hold together. Melt chocolate chips in double boiler. Use a toothpick or candy dipper to dip balls in chocolate, leaving the tops undipped to look like buckeyes. Arrange on wax paper-lined baking sheet. Place in cool area or freezer to set. Makes 4 to 5 dozen.
