Crab, Corn & Pepper Frittata

6 eggs, beaten
1⁄3 c. corn
1⁄3 c. mayonnaise
1⁄4 c. milk
2 T. green onions, chopped
2 T. red pepper, chopped
salt and pepper to taste
1 c. crabmeat, flaked
1 c. shredded Monterey Jack cheese
Garnish: chopped green onions


Whisk together eggs, corn, mayonnaise, milk, onions, red pepper and salt and pepper to taste. Gently stir in crabmeat. Pour into a greased 10" pie plate. Bake at 350 degrees for 15 to 20 minutes. Sprinkle with cheese and bake for 5 more minutes, or until cheese is melted. Garnish with green onions. Serves 4 to 6.
