2 c. all-purpose flour 3/4 c. sugar 2 t. baking powder 1/2 t. salt 2-1/2 t. cinnamon 1 egg, beaten 1 c. milk 1/4 c. butter, melted 1-1/2 t. vanilla extract 1/2 c. apple, peeled, cored and finely diced 12 caramels, unwrapped and diced
Combine flour, sugar, baking powder, salt and cinnamon in a large bowl; set aside. In a separate large bowl, mix together egg, milk, butter and vanilla; add flour mixture, stirring just until blended. Stir in apples and caramels. Divide batter evenly among 12 greased muffin cups. Bake at 350 degrees for 25 minutes, or until tops spring back when lightly pressed. Serve warm.
Freeze & Serve Instructions: Cool; place in a freezer bag and freeze. To serve, wrap frozen muffins in heavy aluminum foil and bake at 300 degrees for 12 to 15 minutes. | |
