2 c. butter, softened 1-1⁄3 c. sugar 2 eggs, beaten 2 t. vanilla extract 5 c. all-purpose flour
In a large bowl, blend butter and sugar together; stir in eggs and vanilla. Add flour; mix until well blended. Shape dough into a ball; chill in freezer for 10 minutes. Roll out dough 1⁄4-inch thick on a lightly floured surface. Transfer to parchment paper-lined baking sheet and cut into squares. Or, roll out and cut out with cookie cutters as desired. Bake at 350 degrees for 8 to 10 minutes, until golden. Cool on wire racks. Makes 4 dozen.
