2 T. oil
1/2 c. onion, chopped
4 to 5 cloves garlic, diced
1 lb. ground beef
1 lb. ground regular or Italian pork sausage
14-1/2 oz. can diced tomatoes
2 t. dried oregano
2 t. dried thyme
1 t. ground cumin
1 t. red pepper flakes
4 c. beef broth
6 to 7 c. cabbage, shredded
salt and pepper to taste
Heat oil in a large skillet over medium heat; sauté onion and garlic
until onion is translucent. Add beef and sausage to skillet. Cook for 4 to
5 minutes until no longer pink, breaking up with a spatula. Drain;
transfer beef mixture to a lightly greased 6-quart crockpot. Add
tomatoes with juice and seasonings; stir well. Add beef broth; top with
cabbage. Cover and cook on high setting for 4 to 5 hours, or on low
setting for 7 to 8 hours. Stir again and serve. Serves 6.
