4 red, yellow or green peppers, tops cut off and reserved 4 eggs, beaten 1/2 c. milk 1 c. broccoli, finely chopped 1/2 t. garlic powder 1/4 t. Italian seasoning Optional: shredded mozzarella cheese
Finely dice reserved tops of peppers; set aside. Place pepper shells upright in custard cups; set cups in a 9"x9" baking pan. In a bowl, whisk together eggs, milk, broccoli, diced pepper and seasonings; pour evenly into
peppers. Bake, uncovered, at 325 degrees for 40 to 50 minutes, until peppers are tender and egg mixture is set. Top with cheese if desired and bake 10 more minutes. Let stand 5 minutes before serving. Makes 4 servings. | |
