Diner-Style Corned Beef Hash

1 T. oil
2 potatoes, peeled and diced
1 onion, chopped
12-oz. can corned beef, chopped
1 t. pepper
2-1/2 T. cider vinegar, divided


Heat oil in a skillet over medium-high heat. Add potatoes and onion; sauté until light golden. Stir in corned beef, pepper and one tablespoon vinegar. Cook for 3 to 5 minutes; stir in remaining vinegar. Partially cover skillet. Reduce heat and cook for about 20 minutes, stirring occasionally, until potatoes are tender. Serves 2.
