1 egg, beaten 1 T. green olives, diced 1 T. black olives, diced 1/2 c. dry bread crumbs 1 T. fresh parsley, minced 1 lb. ground pork sausage 1 lb. lean ground beef 1 T. grated Parmesan cheese Optional: pretzel sticks
Preheat air fryer to 400 degrees. Spray basket with non-stick vegetable spray. In a bowl, combine egg, olives, bread crumbs and parsley. Add sausage, ground beef and cheese; mix well. Shape into 1-1/4 inch balls. Place in a single layer in air fryer basket. Working in batches, cook for about 10 minutes until lightly browned and meat thermometer reaches 160 degrees. Remove and keep warm; repeat with remaining meatballs. If desired, insert a pretzel stick in each meatball. Makes about 2 dozen. | |
