1 lb. mild or hot ground pork sausage
1 c. onion, chopped
1-1/2 c. carrots, peeled and chopped
27-oz. can seasoned turnip greens
14-oz. can seasoned turnip greens
10-oz. can diced tomatoes with green chiles
2 15-oz. cans black-eyed peas, drained and rinsed
1 t. red pepper flakes
1/2 t. pepper
In a skillet over medium heat, brown sausage with onion and carrots. Transfer sausage mixture to a slow cooker; add greens, tomatoes with juice, peas and seasonings. Cove and cook on high setting for one to 2 hours. Serves 6 to 8.
