Baked Oatmeal Blackberry Cobbler

1 c. frozen blackberries
1 T. cornstarch
1 c. rolled oats, uncooked
1 c. almond milk or regular milk
1 c. unsweetened applesauce
2 t. cinnamon
1 T. sugar or calorie-free powdered sweetner
1 t. vanilla extract
Garnish: vanilla ice cream or frozen yogurt


Spray a 6-cup muffin tin with non-stick vegetable spray. In a small bowl, toss frozen blackberries with cornstarch until berries are coated. Divide the berries among muffin cups; set aside. In a separate bowl, combine remaining ingredients except garnish. Mix well and spoon over berries. Bake at 375 degrees for 20 minutes. Serve topped with a scoop of ice cream or frozen yogurt. Makes 6 servings.
