River House Casserole

1-1/2 lbs. ground beef
1 onion, diced
8-oz. elbow macaroni, uncooked
28-oz. can stewed tomatoes
8-oz. can tomato sauce
8-oz. pkg. cream cheese, room temperature, cubed
8-oz. container sour cream
8-oz. pkg. shredded Cheddar cheese


In a large skillet over medium heat, brown beef with onion; drain and set aside. In a large saucepan, combine uncooked macaroni, stewed tomatoes with juice and tomato sauce; add some water if needed to cover ingredients. Cook over medium heat, stirring occasionally, until macaroni is nearly tender. Mix in beef mixture. Add cream cheese and sour cream; stir until everything is mixed well and melted together. Transfer to a greased 3-quart large casserole dish. Top with shredded cheese. Bake, uncovered, at 325 degrees for 20 minutes. Makes 6 to 8 servings.
