3/4 c. shortening 1 c. sugar 2 eggs, beaten 2 T. milk 1 t. vanilla extract 2-1/4 c. all-purpose flour 1 t. baking powder 1/2 t. baking soda 1/2 t. salt 1 c. chopped pecans 1 c. chopped dates 1/2 c. maraschino cherries, drained and chopped 2-1/2 c. corn flake cereal, crushed Garnish: additional maraschino cherries, halved
Blend together shortening and sugar until creamy. Add eggs, milk and vanilla; blend well. In a separate bowl, sift together flour, baking powder, baking soda and salt. Add flour mixture to shortening mixture and stir well. Fold in nuts, dates and cherries. Form dough into balls of one level tablespoon per cookie. Roll in cereal. Place on lightly greased baking sheets; press a cherry half into the center of each cookie. Bake at 375 degrees for 10 to 12 minutes. Cool completely; store in an airtight container. Makes 5 dozen. | |
