10-oz. pkg. frozen cauliflower rice
10-oz. pkg. frozen corn
15-1/2 oz. can black beans
3/4 c. onion, chopped
16-oz. jar favorite salsa
1 c. ranch salad dressing
8 slices Pepper Jack cheese, stacked and cut into chunks
Separately cook cauliflower and corn according to package directions.
Drain; allow to cool. Transfer cauliflower and corn to a large salad bowl;
add beans with liquid and remaining ingredients. Toss to mix well;
cover and chill until serving time. Makes 6 to 8 servings.
