1 onion, chopped
1/4 c. butter
4 c. chicken broth
28-oz. can whole tomatoes
1 T. sugar
2 15-oz. cans pumpkin
2 T. fresh parsley, chopped
2 T. fresh chives, chopped
Sauté onion in butter until onion is tender. Add broth and simmer for 15 minutes. Place tomatoes in a blender or food processor and blend until smooth. Add tomato mixture, sugar, pumpkin, parsley and chives to broth; heat through. Makes 8 servings.
