Slow-Cooker Chile Verde Soup

1⁄2 lb. pork tenderloin, cut into 1⁄2-inch cubes
1 t. oil
2 c. low-sodium chicken broth
2 15-oz. cans low-sodium white beans, drained and rinsed
2 4-oz. cans diced green chiles
1⁄4 t. ground cumin
1⁄4 t. dried oregano
salt and pepper to taste
Optional: chopped fresh cilantro


Cook pork in oil in a skillet over medium heat for one to 2 minutes, until browned. Place pork in a 4-quart slow cooker. Add remaining ingredients except cilantro; stir well. Cover and cook on low setting for 4 to 6 hours. Sprinkle cilantro over each serving, if desired. Serves 8.

Nutrition Per Serving: 151 calories, 2g fat, 0g sat fat, 14mg cholesterol, 568mg sodium, 21g carbohydrate, 8g fiber, 0g sugars, 13g protein.
