2 lbs. ground beef
10-oz. can diced tomatoes with green chiles
14-1/2 oz. can stewed tomatoes
6 baking potatoes, peeled and diced
15-oz. can tomato sauce
15-1/2 oz. can corn, drained
14-1/2 oz. can ranch-style beans
salt and pepper to taste
Garnish: shredded cheese
Brown beef in a Dutch oven over medium heat; drain. Add tomatoes with juice and remaining ingredients; reduce heat. Cover and simmer until potatoes are tender and mixture has thickened, about 45 minutes. Garnish with shredded cheese. Makes 8 to 10 servings
