1⁄2 c. butter 1 c. brown sugar, packed 1 1⁄2 c. all-purpose flour 1⁄2 t. baking soda 1⁄2 t. salt 1 1⁄2 c. long-cooking oats, uncooked 1⁄4 c. water 2⁄3 c. seedless raspberry jam 1 t. lemon juice
In a large bowl, blend together butter and brown sugar until fluffy; set aside. Combine flour, baking soda and salt in a separate bowl. Stir flour mixture into butter mixture. Add oats and water; mix together until crumbly. Firmly pat half of oat mixture into the bottom of a greased 13"x9" baking pan. In a small bowl, stir together jam and lemon juice; spread over oat mixture. Sprinkle remaining oat mixture over top. Bake at 350 degrees for 25 minutes. Cool completely before cutting into bars. Makes 2 1⁄2 dozen, serves 30.
