Ham & Sweet Potato Casserole

1-1/2 lbs. cooked ham,
cut into 6 serving-size portions
1 T. oil
3 sweet potatoes, peeled and sliced
3 T. brown sugar, packed
1-1/2 c. hot water


In a skillet, brown ham in oil over medium heat; reserve drippings in skillet. Arrange ham in a 3-quart casserole dish; top with sweet potatoes. Sprinkle with brown sugar and set aside. Add hot water to drippings in skillet; cook and stir. Pour over sweet potatoes. Cover and bake at 350 degrees for 45 minutes, basting with pan drippings after 20 minutes. Uncover and bake an additional 15 minutes, until golden. Makes 6 servings.
