Snickerdoodle Bars

1 c. butter, room temperature
2 eggs, room temperature
2 c. brown sugar, packed
1 T. vanilla extract
2-2/3 c. all-purpose flour
2 t. baking powder
2 T. sugar
2 t. cinnamon


Combine butter, eggs, brown sugar and vanilla in a large bowl. Beat with an electric mixer on medium speed until combined. Add flour and baking powder; mix well until a thick batter forms. Spray the bottom of a 13"x9" baking pan with non-stick vegetable spray. Spread batter in pan; use wax paper to pat it down. Combine sugar and cinnamon; sift over the top. Bake at 350 degrees for 25 to 30 minutes, until the top springs back when pressed. Cool; cut into bars. Makes 2 dozen.
