1-3⁄4 oz. can shoestring potatoes
4 eggs
1 c. shredded Cheddar cheese
6 slices bacon, crisply cooked and crumbled
Spread potatoes evenly over bottom of a greased 9" pie plate. Make 4 indentations in potatoes almost to bottom of pie plate. Carefully
break one egg into each indentation. Bake at 350 degrees for 8 to 10 minutes, until eggs are almost set. Sprinkle with cheese and bacon.
Return to oven; bake 2 to 4 more minutes, until eggs are set and cheese melts. Cut into 4 wedges; serve immediately. Makes 4 servings.
