Skillet Bowtie Lasagna

1 lb. ground beef
1 onion, chopped
1 clove garlic, chopped
14-1/2 oz. can diced tomatoes
1-1/2 c. water
6-oz. can tomato paste
1 T. dried parsley
2 t. dried oregano
1 t. salt
2-1/2 c. bowtie pasta, uncooked
3/4 c. small-curd cottage cheese
1/4 c. grated Parmesan cheese


Brown ground beef with onion and garlic in a large cast-iron skillet over medium heat; drain. Add tomatoes with juice, water, tomato paste and seasonings; mix well. Stir in uncooked pasta; bring to a boil. Reduce heat to medium-low; cover and simmer for 20 to 25 minutes, until pasta is tender, stirring once. Combine cheeses in a bowl; drop by rounded tablespoonfuls onto pasta mixture. Cover and simmer for 5 minutes. Serves 4.
