1 c. cornmeal
1 c. buttermilk
8-oz. can creamed corn
2 jalapeņo peppers, chopped
1⁄2 t. salt
3⁄4 t. baking soda
2 eggs, beaten
1 onion, chopped
1⁄4 c. oil
1 c. shredded Cheddar cheese, divided
Combine first 8 ingredients; set aside. Heat oil in an 8" to 10" cast- iron skillet; pour in half the batter. Sprinkle with half the cheese; pour remaining batter over top. Sprinkle with remaining cheese. Bake at 400 degrees for 30 minutes. Serves 6 to 9.
