Cinnamon Streusel Coffee Cake

3-1/4 c. all-purpose flour, divided
2 T. baking powder
1/2 t. salt
1-1/2 c. sugar
3/4 c. butter, divided
2 eggs, beaten
1 c. milk
2 t. vanilla extract
1 c. brown sugar, packed
4 t. cinnamon


Mix 3 cups flour, baking powder, salt and sugar in a large bowl. Cut in 1/2 cup butter until mixture resembles cornmeal. Blend in eggs, milk and vanilla; stir just enough to combine thoroughly. Spread evenly into a greased and floured 13"x9" baking pan. For topping, mix brown sugar, remaining flour and cinnamon; melt remaining butter and stir in. Sprinkle topping over batter; bake at 375 degrees for 25 to 30 minutes. Cut into squares; serve warm. Makes 15 servings.
