9" pie crust, unbaked
1/3 c. semi-sweet chocolate chips
1/3 c. butter, melted
2/3 c. sugar
1 c. light or dark corn syrup
3 eggs, beaten
1 T. vanilla extract
1-1/4 c. old-fashioned oats, uncooked
Optional: vanilla ice cream
Press pie crust into a 9" pie plate. Scatter chocolate chips evenly over crust; set aside. In a large bowl, mix butter and sugar until smooth and creamy. Whisk in corn syrup, eggs and vanilla until well blended. Fold in oats. Pour batter over chocolate chips in crust. Bake at 350 degrees for 45 minutes, or until a knife tip inserted in the center comes out clean. Set pan on a wire rack to cool. Top with a scoop of ice cream, if desired. Makes 8 servings.
