8 slices applewood smoked bacon
8 slices whole-grain bread
1/4 c. peach preserves
1 to 2 apples, cored and thinly sliced
1/4 c. creamy peanut butter
2 to 3 T. butter, softened and divided
In a cast-iron skillet over medium heat, cook bacon until crisp; drain bacon on paper towels. Spread 4 slices of bread with preserves; layer apple and bacon slices over preserves. Spread remaining bread slices with peanut butter; close sandwiches. Spread tops of sandwiches with half of butter. Place sandwiches butter-side down on a griddle over medium heat. Spread remaining butter on unbuttered side of sandwiches. Cook 2 to 3 minutes
per side, until bread is toasted and sandwiches are heated through. Serve warm. Makes 4 sandwiches.
