Fresh Strawberry Bread

3 c. all-purpose flour
2 c. sugar
1-1/2 t. cinnamon
1 t. baking soda
1 t. salt
1 c. oil
4 eggs, beaten
2 c. strawberries, hulled and diced
Optional: 1-1/4 c. chopped nuts


In a bowl, combine flour, sugar, cinnamon, baking soda and salt. In a separate bowl, blend together oil and eggs; fold in strawberries. Gradually add egg mixture into flour mixture; stir until just moistened. Add nuts, if using. Pour into 2 greased and floured 9"x5" loaf pans. Bake at 350 degrees for one hour. Makes 2 loaves.
