6 pork loin center-cut chops, 1-inch thick
salt and pepper to taste
2 T. olive oil
1 T. fresh thyme, chopped, or 1/2 t. dried thyme
Sprinkle pork chops on both sides with salt and plenty of pepper. In a small bowl, stir together oil and thyme; brush over both sides of pork chops. Arrange in a shallow roasting pan. Bake, uncovered, at
350 degrees for 50 to 60 minutes. Makes 6 servings.
