1/2 c. sugar
1 T. all-purpose flour
1 egg
2 T. apple cider vinegar
8 oz. can crushed pineapple, drained and juice reserved
4 to 6 c. red, yellow and green apples, cored and sliced
2-1/2 c. salted peanuts, divided
8 oz. whipped topping
In a medium saucepan, over low heat bring sugar, flour, egg, vinegar and pineapple juice to a boil stirring constantly. Remove from heat and cool. Place apples into a large serving bowl; add pineapple and 2 cups peanuts. Fold in sugar mixture and whipped topping; top with remaining peanuts. Makes 10 servings.
