30-oz. pkg. frozen diced potatoes with onions & peppers, divided
2 8-oz. pkgs. shredded Colby Jack cheese, divided
1 lb. ground pork breakfast sausage, browned and drained, divided
2 t. garlic powder
salt and pepper to taste
8 eggs
2 c. milk
In a greased 6-quart crockpot, evenly layer 1/2 each of potatoes, cheese
and browned sausage. Repeat layering; sprinkle with seasonings. Beat
eggs in a large bowl. Whisk in milk; pour over ingredients in crock and
mix gently. Cover and cook on low setting for 7 to 8 hours, until set.
Makes 8 to 10 servings.
