2-4-oz. cans whole green chiles, drained 2 to 3 tomatoes, chopped 2 c. shredded Colby Jack cheese 1 c. biscuit baking mix 3 eggs 1 c. milk 1/2 t. salt
In a lightly greased 8"x8" baking pan, layer chiles, tomatoes and cheese. Beat together remaining ingredients and spoon over cheese. Bake, uncovered, at 375 degrees for 30 to 35 minutes, until set. Serves 3 to 4. | |
