4 pork chops
1 T. lime juice
1/4 t. ground ginger
3 sweet potatoes, peeled and cubed
3 peaches, pitted and sliced
1/4 c. pure maple syrup
Optional: 1 T. cinnamon-sugar, 1 T. crushed pecans
Arrange pork chops in a 13"x9" baking pan coated with non-stick vegetable spray. Drizzle pork chops with lime juice; sprinkle with ginger. Layer sweet potatoes and peaches over pork chops; drizzle with maple syrup. If desired, sprinkle with cinnamon-sugar and pecans. Cover with aluminum foil. Bake at 400 degrees for 35 minutes, or until pork chops are cooked through and sweet potatoes are tender. Serves 4.
