Garlicky Tomato Soup

3 tomatoes, cubed
2 green, red or yellow peppers, cut into bite-size pieces
10 cloves garlic, coarsely chopped and divided
1/2 c. olive oil
2 c. water
2 t. salt
pepper to taste


Combine tomatoes, peppers and half the garlic in a food processor. Pulse until tomatoes and peppers are chopped; set aside. Heat oil in a saucepan over medium heat. Add tomato mixture and cook, stirring often, about 5 minutes. Add remaining ingredients; bring to a boil. Reduce heat to low and simmer for 10 minutes. Serves 4.
