2 eggs, beaten
1-1/2 c. milk
2 c. cornmeal
1 c. all-purpose flour
1 T. baking powder
1/2 t. salt
oil for deep frying
In a bowl, whisk together eggs and milk; set aside. In
a large bowl, combine remaining ingredients; stir in
egg mixture. In a deep fryer, heat several inches oil
to 350 degrees. Working in batches, drop batter into
oil by spoonfuls. Cook until golden on all sides. Makes 6 to 8 servings.
