Grilled Cheese Onion Burgers

1 lb. ground beef chuck
1 T. fiesta ranch seasoning mix
1 t. pepper
softened butter to taste
8 slices sourdough bread
8 slices Pepper Jack cheese
1 sweet onion, sliced
salt and pepper to taste
Garnish: sliced beefsteak tomatoes, dill pickle slices
Optional: favorite burger condiments


Combine beef, seasoning mix and pepper in a bowl. Mix gently; form into 4 patties. Grill or pan-fry patties to medium doneness. Meanwhile, spread butter on one side of bread slices. Place all slices on a hot grill or griddle; grill until crisp and golden. Remove 4 bread slices; top remaining slices with 2 cheese slices each. Grill until cheese is melted; remove from grill. In a small skillet, sauté onion in a little more butter until soft and golden; season with salt and pepper. Assemble sandwiches with burgers, tomato slices, grilled onions, pickle slices and desired condiments. Makes 4 sandwiches.
