Ham with Cumberland Sauce

4 to 5-lb. fully-cooked bone-in ham
1/2 c. brown sugar, packed
1 t. dry mustard
1 to 2 t. whole cloves

Cumberland Sauce:

1 c. red currant or apple jelly
1/4 c. orange juice
1/4 c. lemon juice
1/4 c. red wine or apple juice
2 T. honey



Using a sharp knife, score ham in diamond shapes. In a medium bowl, combine brown sugar and mustard; spread over ham. Insert a whole clove in center of each diamond. Place ham in a large roaster with a rack. Bake, uncovered, at 325 degrees for 20 to 22 minutes per pound, about one hour and 40 minutes, or until ham is heated through and a meat thermometer reads 140 degrees. Cumberland Sauce: Combine ingredients in a medium saucepan. Cook over medium heat until sauce thickens, stirring often. Serve Ham with Cumberland Sauce. Serves 8 to 10.
