Sweet Potato Crunch

1/2 c. sugar
1 c. margarine,melted and divided
2 eggs, beaten
1 t. vanilla extract
1/2 c. milk
3 c. sweet potatoes, peeled, boiled and mashed
1 c. brown sugar, packed
1/2 c. all-purpose flour


Whisk sugar, 1/2 cup margarine, eggs, vanilla and milk together in a large mixing bowl; blend in sweet potatoes. Spoon into a buttered 13"x9" baking pan; set aside. Combine brown sugar, flour and remaining butter together; sprinkle over potato mixture. Bake at 350 degrees for 25 minutes. Serves 4.
