3 eggs, beaten 1/4 c. plus 2 T. milk 3 slices sourdough bread, halved pepper to taste 1 c. shredded mozzarella cheese, divided 1 c. shredded sharp Cheddar cheese, divided 2 green onions, minced and divided 1/3 c. roasted red peppers, chopped and divided 2 thin slices cooked ham
Beat eggs and milk together in a shallow dish; add bread and let stand 5 minutes. Arrange half of bread in a lightly greased 9"x5" loaf pan; add pepper to taste. Layer with half each of cheeses, onions and peppers. Arrange ham on top; layer with remaining cheeses and veggies. Cover with remaining bread and pour any remaining egg mixture over top. Bake, uncovered, at 350 degrees for 40 to 45 minutes, or until cheese is bubbly. Cool slightly before serving. Serves 2.
