2 egg whites 1/4 t. almond extract 1/2 c. all-purpose flour 1/4 t. salt 1/2 c. sugar 2 T. butter, melted and cooled slightly 2 doz. paper fortunes, 4 inches long by 1/2 inch wide
Whisk together egg whites and extract until foamy. In a separate bowl, mix flour, salt and sugar. Blend flour mixture into egg white mixture; add butter and stir well. Working with one cookie at a time, drop batter by tablespoonfuls onto a parchment paper-lined baking sheet, about 4 inches apart. Spread batter into a 3-inch circle with a spoon. Bake at 400 degrees for about 5 minutes, until edge turns golden. Working quickly, slide a spatula under cookie; lift and place on a tea towel. Place a fortune on cookie, close to the middle. Fold cookie in half, pinching at top to form a loose semicircle. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Allow to harden. Repeat with remaining batter. Makes 2 dozen.
