1 c. chopped pecans 1 c. brown sugar, packed 1/2 c. all-purpose flour 2 eggs, beaten 1/2 c. butter or coconut oil, melted and cooled slightly
Mix pecans, brown sugar and flour in a large bowl; make a well in the center and set aside. In a separate bowl, beat eggs just until foamy; stir in butter or oil. Add pecan mixture to egg mixture; stir just until moistened. Spoon batter into 9 muffin cups greased only on the bottom, filling 2/3 full. Bake at 350 degrees for 20 to 25 minutes, until golden. Promptly remove muffins from muffin tin; cool on a wire rack. Makes 9 muffins.
